Salsa (Green chili, Fresh Tomatoes, Fresh Cilantro, salt.. Mix it all up in a food processor)
Fresh Guacamole (1 Avocado, Fresh Cilantro – ¼ cup, Lemon Juice – 1 tsp, Salt – a pinch)
Fresh soft tortillas (Get it from your local Mexican Mercado!). These are cheap, soft and taste great
Fresh Lettuce cut
½ cups Black Beans (soak them overnight, red beans or kidney beans can be used also)
½ cup Rice
1 ½ cups water
1 Tbsp. fresh ginger
Throw the water away from the soaked bins (it causes flatulence, which you don’t want in a classroom!) Put the soaked beans and rice in a rice cooker. Add salt. Add the water. Go get ready! In about 30 minutes nice mushed rice and beans are ready for the tacos.
When eating. Layout one of the soft tortillas. Load it with the Rice and beans. Add the guacamole, Salsa and fresh lettuce. For the lunch boxes, you could get everything except the rice done the night before. Make the fresh rice in the morning and we are good to go!
