Rice Pilaf

1 cup rice (any kind works, long grain or basmati)

½ cup mixed veggies

½ cup cabbage chopped fine

1 tsp cumin seeds

2-3 bay leaves 

½ tsp turmeric powder

1 tsp crushed coriander seeds

1 Tbsp. fresh ground ginger 

½ Tbsp. coconut oil 

2 cups of hot water

Salt to taste

Put oil in a wok and allow to heat. Add cumin seeds and bay leaves simmer till they are brown. Add the cabbage and sauté till the cabbage is a little caramelized (brown on the edges). Add ginger and turmeric. Add the rice and roast for a minute or so. Add the mixed veggies and let simmer for another minute on low flame. Add 2 cups of hot water. Add the salt (I would do about ½ Tbsp.). Mix well. On medium to high flame let the rice come to a boil and partially cook. Reduce flame to low, cover and allow to cook for about 10 minutes, checking every 2-3 minutes if rice is done.
