Ingredients:
6 C broccoli florets
1 t fresh grated ginger
1/8 to 1/4 C celery chopped (Depend on how strong celery taste you like)
2 T Whole Wheat Flour (You can substitute this with quinoa flour or amaranth flour)
1 T Ghee (clarified butter)
1 C fresh almond milk
1 t spice mix
Salt according to taste
Method:
Heat 1/2 T ghee in a pan. Sauté celery, ginger, and broccoli florets. Add spice mix. and salt. Cook it for few minutes in an open pan till broccoli florets become tender but do not change the color. Blend all of them together. Heat 1/2 T ghee in another pan and add 2 T Whole Wheat flour. Roast it nicely until golden brown, Add freshly made almond milk and whisk it nicely. Cook until it is bubbly and then add blended soup into this and cook for two minutes. Season it with some black pepper. Squeeze some lime according to taste while honoring this preparation. if you have some homemade crotons add them to the soup to give a crunchy taste.
