Cut one cauliflower into florets. Process them in a food processor until the texture resembles rice ๐. If you don’t have a food processor then you can grate the cauliflower (takes longer). Combine 1/2 cup of yogurt, 1/2 C of finely grated parmesan cheese, and 1/2 tsp of oregano ๐ฟ. Season with salt and pepper according to your taste. Heat a large non-stick skillet. Spray with cooking spray or spread some olive oil. Scoop a little more than spoonful off the cauliflower mix onto the pan and shape the mixture so it resembles a slice of bread. Repeat this process on the other side of the pan. Cook your “bread slices” until they are golden brown. Top one of the cauliflower bread slices with some mozzarella cheese and place the other bread slice on top. Cook on both sides until the cheese melts. Congrats ๐ You have your very own cauliflower grilled cheese sandwich. Enjoy ๐.
