Rice and Lentil Porridge
Recipe
Ingredients:
1 C mung dal 1 C basmati Rice
½ C carrots ½ C Squash
½ C spinach 4 C water
2 t spice mix 2 t salt
1 T ghee 1 t cumin Seeds
4-5 curry leaves 1 green chilli chopped
1 t ginger
Preparation:
Add ghee to the pan, add cumin seeds, curry leaves, ginger, chilis, spice mix. Roast a little bit, add washed mung dal and rice. Roast it for few seconds, add 4 C water. Let it cook for a few minutes when semi-cooked add vegetables. Let this kitchari cook on simmer for 45 mins or 30 mins. Keep adding water if it gets dry. Once it is completely cooked in a mushy consistency. Garnish with cilantro.
